The data is a complete set of information collected during the Ph.D., research work on physico-chemical, microbial, sensory, mineral, DPPH, colour, TPA and product characteristics of kodo millet and Sargassum tenerrimum seaweed incorporated chicken nuggets, packed under aerobic and vacuum packaging and stored in chiller at 4°C until spoilage.
