Creating a spontaneously fermented ‘tonic water’ using Belgian endive root

Description

We recovered 12 MAGs from endive roots spontaneously fermented: two belong to Leuconostoc miyukkimchii, two to Leuconostoc mesenteroides subsp. mesenteroides, and eight to Weissella soli.
