Description

The data contains all the data that shows the dynamics of the population and the pH on raw CBS, its fiber and MRS culture media, in in-vitro testing, to evaluate the capacity of CBS to support the growth of probiotics.

Steps to reproduce

Raw CBS and CBS fiber were obtained from fermented cocoa beans and the chemical digestion of RAW CBS, respectively. Each cocoa by-product was physicochemically characterized. The growth of three probiotic bacteria, Lacticaseibacillus casei ATCC 393, Lactiplantibacillus plantarum ATCC 14917, and Pediococcus acidilactici ATCC 8042, was evaluated individually in culture media prepared with Raw CBS and CBS fiber, which were hydrated with water to a concentration of 2.5% w/v and inoculated with an initial concentration of 10 3 cells/mL of microorganisms in each culture medium. The microorganisms were incubated at 37°C under anaerobic conditions for 72 h. A control in which each microorganism was inoculated in MRS broth medium served as a reference. The population of Colony Forming Units per milliliter (CFU/mL) of the microorganisms used in each culture medium was determined by the microdrop plate counting technique on MRS agar plates.
