, Description
Untargeted metabolite dataset of black pepper (Piper guineense), chilli pepper (Capsicum annuum), garlic (Allium sativum), and ginger (Zingiber officinale) were detected using a gas chromatography time-of-flight high-resolution mass spectrometry. This file contains the raw data of compounds detected in the spices, and the processed data. The compounds were classified by their observed ion mass-to-charge ratio, retention time, molecular formula and average peak. This piece of data will encourage the utilisation of these spices in developing functional foods, and application in therapeutic medicine.
