Experimental data of the pectin production by using citric acid as a solvent of extraction. It contains data from Box-Beihken experimental design for pectin yield, degree of esterification, methoxyl content and anhydrouronic acid content and, chemical characterization with properties as: Ash (%), Alkalinity of ash (Calcium carbonate ,%) and Free acid (meq/g). Additionally, there is a code in R programming for Anova and the calculation of optimization of the experimental responses.
