Description

This dataset contains the raw experimental data supporting the manuscript "Non-Equilibrium Interfacial Thermodynamics of Freeze–Thawed Yellowfin Tuna (Thunnus albacares): Ice Surface Tension and Water-Transport Driving Forces". It includes the complete differential scanning calorimetry (DSC) measurements and drip-loss data obtained from yellowfin tuna samples subjected to repeated freeze/thaw cycles. These data were used to characterize the thermodynamic state of the freeze-concentrated phase and to validate the proposed non-equilibrium thermodynamic framework describing water transport and structural evolution during freezing and thawing.
