Analytical data on oxidative state and stability of plant-based food products

Description

This dataset contains analytical data generated from studies investigating the oxidative state, stability, and chemical composition of plant-based food products. The deposited files include data associated with different analytical studies involving chromatographic and microextraction-based approaches for the determination of carbonyl compounds, volatile compounds, and other chemical markers related to food quality and stability. The dataset contains data supporting several research outputs as well as additional data intended for further scientific analysis and future publications.

Steps to reproduce

Data generated with different chromatographic equipments. To visualize the data latest versions of Xcalibur (Thermo) and MassHunter (Agilent) softwares are needed.
