Description

This dataset contains time-resolved electronic-nose measurements from three independent beef-spoilage experiments identified as B1, B2 and B3. Each run used a newly procured physical beef specimen and was conducted on a different experimental occasion. B1 was obtained from Supplier 1, while B2 and B3 were obtained from Supplier 2 on different days and were distinct physical specimens. In each experiment, a 250-g beef portion was monitored continuously using an electronic-nose containing eight MQ-series gas sensors and temperature and humidity sensors. Aerobic Plate Count, reported as log₁₀ CFU/g, was used as the microbiological reference. Experimentally measured and interpolated microbial-load values are distinguished using the TVC_Status column. Data from the three experiments were merged into one file while retaining the Run_ID column. Records sharing the same Run_ID are repeated time-resolved sensor measurements from the corresponding physical beef specimen and are not independent biological samples. Run_ID definition Run_ID: Identifier of the independent beef-spoilage experiment. B1, B2 and B3 represent three different physical beef specimens evaluated on separate experimental occasions. Multiple rows with the same Run_ID are repeated sensor measurements from the same specimen. Suggested keywords Electronic nose; beef freshness; meat spoilage; aerobic plate count; total viable count; MOS gas sensors; ESP32; independent experimental runs; machine learning.
