Description

This dataset comprises Mass Spectrometry (MS) spectra obtained from red cabbage. The spectra are integral to a research initiative titled "Coacervation of Double Emulsions with Anthocyanins Using Plant-Based Proteins." This investigation explores the innovative application of plant-derived proteins for encapsulating anthocyanins within double emulsion systems. Anthocyanins, natural pigments found in red cabbage and other plants, are known for their antioxidant properties and potential health benefits. The project aims to harness these compounds for enhanced stability and bioavailability, potentially leading to novel food, pharmaceutical, and cosmetic applications. The research is being conducted under the auspices of the SONATA program, backed by the National Science Center, Poland, with the project reference number 2021/43/D/NZ9/01572.
