Description
This dataset contains LC-MS metabolite profiling data for Moringa oleifera leaves subjected to four post-harvest drying methods: fresh, freeze-drying, oven-drying and sun-drying. The dataset includes raw and processed LC-MS data, metabolite annotations, chromatograms, mass spectra and supporting files used to investigate the effect of drying on metabolite composition.

Steps to reproduce
Fresh Moringa oleifera leaves were collected and processed using four post-harvest drying methods: fresh, freeze drying, oven drying and sun drying. Methanolic extracts were prepared from each sample and analysed by liquid chromatography mass spectrometry (LC-MS) following the analytical procedure described in the associated manuscript. The acquired LC-MS data were processed to detect chromatographic peaks, determine retention times and obtain mass to charge (m/z) values. Metabolites were identified through spectral interpretation and comparison with reference databases and published literature. Chromatograms, mass spectra and metabolite annotation tables were generated from the processed data. This dataset contains the raw LC-MS data, processed metabolite tables, chromatograms, mass spectra and supporting files used in the study. These data allow other researchers to verify the metabolite annotations, compare metabolite profiles across different drying methods and perform additional analyses using the original dataset.
