Description

We present an analysis of mycotoxins from four main staple grains grown in Uganda from nine districts. Our work provides an overview of the dietary exposure to four main mycotoxins (Aflatoxin, Ochratoxin, fumonisin, and deoxynivalenol), grains most susceptible to mycotoxin contamination in Uganda, and co-contamination of grains with multiple mycotoxins. We believe this work will be invaluable to target these knowledge gaps and ultimately improve mycotoxin management practices.
