Description

This dataset contains the biochemical profiles of coconut water (liquid endosperm) from three Philippine coconut cultivars: Aromatic dwarf (AROD), Catigan dwarf (CATD), and Laguna tall (LAGT), with fruit ages ranging from 5 to 12 months. The dataset includes sodium, potassium, magnesium, calcium, and chloride (in ppm) in coconut water. Other parameters include glucose content (mg/mL), specific gravity, pH, soluble protein (mg/mL), and total soluble solids (percent Brix). This dataset includes the weight of liquid endosperm (in grams), total fruit weight (in kg), longitudinal (in cm), and transverse circumferences (in cm) of the coconut fruit. The dataset is also an outcome of a DOST, PCIEERD-funded project that develops a high-electrolyte, low-glycemic coconut water beverage product.
