Vitamin C, also known as ascorbic acid, is one of the essential micro nutrients prevent free radicals from damaging the cells in the body. It contributes to healthy skin, bones, and connective tissues. Moreover, it aids in boosting the immune system and absorption of iron. Raw fruits and vegetables are great sources of Vitamin C which includes citrus fruits, berries, green leafy vegetables, and many more. Vitamin C determination can be done through Iodine Titration. This volumetric method allows the vitamin C to form a complex with the Iodine solution in which the iodine is the oxidizing agent. The amount of iodine solution consumed determines the amount of vitamin C present in the sample.Determining the Vitamin C content is crucial for every person, especially health-conscious ones since it is important for nutritional assessment. It must be ensured that the fruit or vegetable intake is adequate for human nutrition. In food technology, determining vitamin C is essential in food processing since it can be an indicator for any optimization in processing methods because processing methods destroy vitamin C. Additionally, it can be an indicator of food quality and freshness. The vitamin C content of a fruit or vegetable helps maintain food quality standards and ensures the production of a nutrient-dense food product.
