Summary. The article considers the influence of various doses of fertilizers on the yield of the zoned variety of pepper "Yadigar", grown in the Lankaran-Astara economic region. and the influence of toxic metals (Cu, Zn, Cd, Pb) on the concentration of the product by stripping voltammetric analysis, which caused a decrease in quality, was considered. Compared to the option without fertilizers, in the options with higher doses of fertilizers, the concentration of toxic metals zinc and cadmium increased, while the concentration of copper and lead, on the contrary, decreased. In all studied options, the concentration of toxic metals in pepper products was at a level not exceeding the MPC in the norms adopted by the Ministry of Health of the Republic of Azerbaijan in the Sanitary and Epidemiological Rules and the rules "Hygienic safety requirements". and nutritional value of food products
