- Data for: Country-specific dietary shifts to mitigate climate and water crisesIncludes input and output associated with the study model, a codebook with file and variable descriptions, and methodological comparisons with other studies. The model estimates the annual per capita and whole country greenhouse gas (GHG) and blue and green water footprints for nine diets and baseline consumption patterns specific to 140 countries. Input includes data on consumption patterns, international trade, scaling parameters for each item in each modeled diet, GHG and water footprints of individual food items, product and value fractions for processed items, item production by country, nutrient composition, and serving sizes. Additional details are provided in the codebook. Output includes the nutrient composition of each diet, and GHG and water footprints of whole diets presented at varying levels of granularity: (1) by country and diet, (2) by country, diet, and item group, and (3) by country, diet, item, and country of origin. Also provided are per-serving, per-kilocalorie, per-gram of protein, and per-kilogram footprints of common food groups. Additional details are provided in the codebook. "study_comparison" provides information on the methods and scope of the current study and of 99 prior studies on the GHG and/or water footprints of diets.
