The following data is a compilation of the transcripts of different interviews and focus groups within the framework of a qualitative investigation with experts on the factors to understand the administrative, operational and financial management of the restaurant industry, as well as the demand and key factors of success for business idea. A quantitative research on interest in a native potato restaurant in Lima was carried out through a Microsoft Forms survey of 441 participants, divided into locals and foreigners interested in similar restaurants.

Steps to reproduce

Experts were identified for interviews. They were invited to the interviews through a video calling platform such as Teams or Meets. In both cases the meetings were recorded. Subsequently, the recordings were processed with the GPT-enhanced transcription processor TL;DV. Quantitative research on interest in a native potato restaurant in Lima was carried out through a Microsoft Forms survey of 441 participants, divided into locals and foreigners interested in similar restaurants. Using non-probabilistic sampling, it was found that 89% of locals and 95% of foreigners showed interest. The data, collected between October 2023 and January 2024, has a margin of error of 5% and a confidence level of 95%.
