Description

This dataset contains raw untargeted metabolomics data generated from the longissimus dorsi muscle of 24 Yanbian steers slaughtered at 24, 28, 32, and 36 months of age, with six independent animals per group. Biological samples are identified as 24-1 to 24-6, 28-1 to 28-6, 32-1 to 32-6, and 36-1 to 36-6, where the first number indicates slaughter age in months and the second number identifies the individual animal. Files labeled Positive_Ion and Negative_Ion correspond to positive- and negative-ion ESI acquisition, respectively. The QC files represent pooled quality-control samples prepared from equal aliquots of the biological samples and analyzed in both ionization modes. Data were acquired using a Vanquish UHPLC system coupled to a Q Exactive HF-X high-resolution mass spectrometer. All metabolomic measurements deposited here were newly generated for this study and have not been published previously.

Steps to reproduce

Raw data were processed using Progenesis QI software for peak picking, integration, and feature-abundance extraction, with automatic sensitivity set to level 3. Metabolites were annotated against HMDB, KEGG, mzCloud, and an in-house MS² spectral library using precursor-ion and fragment-ion tolerances of 10 and 25 ppm, respectively. Features with missing abundance values in ≥70% of samples, fragmentation scores <60, non-animal-source annotations, or QC-sample RSD values >30% were removed. Detailed sample-preparation and acquisition conditions are provided in the associated manuscript.
