Description

This database contains raw data on moisture content, density, water activity, CIELab color parameters, total phenolics (Folin–Ciocalteu), total phenolics and saponins (solvent-based separation), sugars (DNS method), and antioxidant capacity (ABTS assay) in green and roasted coffee from the State of Mexico, Mexico. The samples were processed using three different post-harvest methods—Natural, Honey, and Washed—and subjected to two drying strategies: traditional drying and zeolite-assisted drying.
