Mycotoxins in Selected Cereals Sampled Across Ghana, Exposures and Risk Assessment

This study sought to determine and present a mycotoxin contamination profile of cereals sampled from cereal growing communities along three defined value chain points. It contains detailed LC-MS/MS information, calibration curves and the conditions for running the chromatography. The is information on the frequency of occurrence and profile of each mycotoxin, their concentrations and co-occurrence with other mycotoxins at the value chain points. The exposures and risks (studied as MoE, HQ and HI) were determined based on regulatory models to complete the profiles of the toxins. The results showed a high occurrence of FB1 relative to other mycotoxins.
