Description

This dataset contains experimental data supporting a study on the effects of hot-air drying temperature and duration on the antioxidant activity and UPLC-HRMS metabolite profile of Rhizophora mucronata herbal matcha-like powder. 1. The drying experiment used a completely randomized 3 × 3 factorial design: - Drying temperatures: 60, 65, and 70 °C - Drying durations: 120, 135, and 150 min - Independent replicates: n = 3 per treatment combination - Technical replicate measurements were averaged within each independently processed sample before statistical analysis. 2. STATISTICAL ANALYSIS The drying experiment followed a completely randomized 3 × 3 factorial design. The effects of drying temperature, drying duration, and their interaction were evaluated using two-way ANOVA. Tukey’s honestly significant difference (HSD) test was used for post-hoc comparison at p < 0.05. 5.
