Evaluation of the proximate composition of five edible chrysalises

Description

This study evaluated the nutritional value of five traditional East Asian edible chrysalises, including S. wangi, A. convolvuli, A. pernyi, B. mori and D. punctatus. On a dry weight basis, the content of protein, reducing sugar and energy was highest in S. wangi. The crude fat and ash (concentration was highest in A. pernyii. Five chrysalis powder contained α-linolenic acid and linoleic acid. The chrysalis powder of the five edible insects can be consider as ‘high-protein’ and ‘low-sugar’ food, and taken as whole or used as a protein supplement.
