SCG-TRB Thermal, Rheological and Baking descriptors of SCG-enriched short doughs

Description

Derived tabulated values and per-replicate spreading-force curves supporting the macroscopic characterisation of composite short doughs and cookies in which espresso spent coffee grounds (SCG) replace wheat flour at 0, 4, 8, 12, 16 and 20% w/w (doughs D0–D20). The record contains the five tables of the manuscript: dough formulations (g/100 g), capacitive (reversing) and thermokinetic (non-reversing) MDSC transitions, small-amplitude and frequency-sweep oscillatory-shear descriptors (LVE, flow point, yield point, tanδ, power-law k′, n′, k″, n″), and baking-performance descriptors of the cookies (thickness, volume, deviations from the geometric mould, post-baking moisture and water activity, CIELAB surface colour). Tabulated values are the derived, manuscript-reported figures. Spreading-force curves. spreading_force_replicate.csv (65,151 rows) holds the raw Spread & Stickiness curves acquired on a Texture Analyzer with conical geometry, the dough being compressed to an 8 mm gap between the conical surfaces; 10 replicates per formulation. Columns: sample (formulation code), replicate (replicate identifier), time_s (time from the start of the probe run, s), force_N (load-cell force, N; negative values denote the tensile phase, i.e. detachment of the probe from the dough). spreading_force_mean.csv (1,627 rows) is derived from it and reports, against time_s, the mean and standard deviation of force for each formulation (columns <FORM>_mean_N and <FORM>_sd_N, n = 10). Other raw instrumental data are available from the corresponding author on reasonable request. Sample codes. D0 (control, 0% SCG), D4, D8, D12, D16, D20, where the number is the SCG mass fraction (% w/w) replacing wheat flour. In spreading_force_replicate.csv and spreading_force_mean.csv the control dough is labelled D-CTRL (and its replicate identifiers are prefixed DSTD_); D0, D-CTRL and DSTD all denote the same control sample. Replicate identifiers follow the pattern <sample>_r<n> with n = 1–10; in sample D12 one identifier appears as D12_r without an index (most likely replicate 3, inferred from the numbering and not confirmed against the instrument records). That replicate is complete but is the weakest of the ten D12 runs (886 rows against 954–1010, peak force 72.2 N against 85.0–96.0 N), and should be treated accordingly when averaging.

Steps to reproduce

Version 2 (September 2026) replaces Table4_SAOS_FSOS_descriptors.csv. In Version 1, group means in that table were computed on a subset (3–4) of the five available replicates, the reported dispersion was a 95% confidence half-width (1.96·SE) rather than a standard deviation, and the post-hoc letters derived from those values are therefore superseded. Version 2 reports means, standard deviations and post-hoc groupings (ANOVA on per-replicate values) recomputed on all five replicates, and adds the per-replicate spreading-force curves underlying the stickiness values. Tables 1, 2, 3 and 5 are unchanged from Version 1, which remains archived.
