Description

Beekeepers from Montes de María produce honey from the tropical dry forest. These honeys have different and nowadays is important to ensure authenticity in global markets. Physicochemical parameters as well as sensory characteristics are important to support the traceability and competitive positioning of the apicultural products from the Montes de María subregion, Colombia.

Steps to reproduce

Honey sampling was performed in Montes de María, Colombia, with local beekeepers. Samples were kept frozen before been analised. Standard procedures given by Codex Alimentarius were used to characterize honey physicochemical quality. In case of the e-tongue, Five detection sensors were used in this study to evaluate salinity, acidity, bitterness, bitter aftertaste, astringency, and astringent aftertaste. In the experiments, 3 g of honey diluted in 30 ml of water at 25°C were used. Each sample was evaluated three times, and the average of the results was used for analysis. This means that 7 samples and two tests were obtained. This is organized in an unfolded 8 x 14 matrix. In case of el-nose, 3 g of each honey sample were placed in 40 mL Pyrex® vials with silicone stoppers and inserted into the electronic nose’s automated sampling carousel. After a 24 hour equilibration time at room temperature (25°C). The measurement procedure consisted of pumping reference air (ambient air filtered through activated carbon) over the sensors at a constant flow rate (1 cm3/s) for 10 s to establish a stable baseline. A headspace sample of honey gas, collected with an automated syringe, was then pumped over the sensor surfaces for 30 seconds. The sensors were then exposed to reference air to restore the baseline. The total cycle time for each measurement was 5 minutes. No sensor drift was experienced during the measurement period. Each sample was evaluated three times, and the average of the results was used for analysis. In the experiment, each test lasts 60 seconds, and 4 experiments are conducted with 10 sensors. This means that a matrix with dimensions 1680 rows and 10 columns is obtained after the unfolding process.
