Description
This dataset provides quality, safety, bioactive, and carrageenan-related data of dried red seaweed Kappaphycus alvarezii from South Sulawesi, Indonesia. Samples were collected from Bulukumba, Takalar, Palopo, and Pangkep at different harvest ages. The dataset includes sampling metadata, moisture content, ash content, acid-insoluble ash, salt content, derived impurities, clean anhydrous weed, heavy metals, phenolic equivalent concentration, DPPH radical scavenging activity, carrageenan yield, and carrageenan solution viscosity. These data can be reused for seaweed raw material assessment, carrageenan source comparison, postharvest quality evaluation, and food safety studies.

Steps to reproduce
Seaweed samples were collected from four harvest areas in South Sulawesi, Indonesia. Samples were cleaned, dried, ground, and coded based on location and harvest age. Physicochemical quality parameters were measured using standard gravimetric and titration methods. Heavy metals were determined after acid digestion. Methanolic extracts were prepared for phenolic equivalent concentration and DPPH radical scavenging activity. Carrageenan was extracted under alkaline conditions, precipitated, dried, and evaluated for yield and viscosity. Raw and processed tabular data were organized by sample code, location, harvest age, parameter, unit, replicate, mean, and standard deviation.
