Air, surface and dew point temperature under high humidity conditions during commercial cold storage of apples

Description

Humidity and temperature were recorded in a 50-ton commercial apple cold room. Measurements were taken inside multiple storage bins. Ventilation runtime and temperature setpoint of the cooling system were varied during four tests. The dew point can be calculated from air humidity and temperature, measured close to the fruit. A comparison of dew point and fruit surface temperature indicates whether moisture condensation on the fruit surface is likely. Controlled atmosphere conditions were applied during two tests. The tests were carried out during the winter season of 2024/25 near Ravensburg, Germany.

Steps to reproduce

Sensor pairs were installed in 10 to 17 apple bins per test. Each pair consisted of Sensirion STS35 and SHT45 sensors for temperature and humidity measurements, respectively. Sensors were calibrated under high humidity conditions to improve accuracy. MATLAB example scripts are provided for dew point calculation and plotting of the data.
