This dataset contains experimental data supporting the study “Functional and Structural Performance of Canola, Black Caraway, and Soy Proteins in Anthocyanin Microencapsulation”. The study investigated the performance of canola, black caraway, and soybean proteins as matrices for anthocyanin microencapsulation, with emphasis on the relationship between protein structural and functional characteristics and encapsulation performance. The deposited data include measurements used to determine anthocyanin content, microencapsulation efficiency, and antioxidant activity. Raw spectrophotometric measurements, replicate values, blank corrections, calculation parameters, mean values, and standard deviations are provided. The dataset enables verification of the calculations underlying the evaluation of anthocyanin retention, encapsulation performance, and antioxidant properties of the investigated plant protein-based systems.
