This supplementary file contains detailed methodologies for free amino nitrogen determination, peptide profiling by RP-UPLC, and quantification of cationic and anionic metabolites. It also includes the sample preparation workflow for metabolomic analysis (Figure S1), principal component analysis if metabolite datasets (Figure S2), changes in metabolite contents before and after enzymatic hydrolysis (Table S1), and the top metabolites contributing to principal components.
