Aflatoxin and fumonisin contents in nixtamalized corn dough, El Salvador
Description
This dataset corresponds to the research "Aflatoxins and Fumonisins in Nixtamalized Corn Masa in El Salvador: A Two-Year Survey." This set consists of two blocks. The first consolidates all Aflatoxin (AFT) and Fumonisin (FBs) contents in nixtamalized corn dough over two periods. In the case of AFTs, Period 1 covers the extended rainy season of 2023 and the dry season from 2023 to 2024. For FBs, Period 2 encompasses the dry season of 2023 to 2024 and the rainy season of 2024. The second block contains meteorological parameter data sampled from 18 stations, provided by the Observatory of Hazards and Natural Resources at the Ministry of Environment of El Salvador. The key variables considered are average temperature (°C), total rainfall over 24 hours (mm), relative humidity, and the number of rainless days.
