Description

This dataset contains experimental and computational tools obtained for the data-driven optimization of a functional cupuassu (Theobroma grandiflorum) cremogenate enriched with Lactobacillus casei ATCC 393 and inulin. The experimental data were carried out using a central composite design and response surface methodology to assess the influence of probiotic biomass, inulin concentration, and homogenization time on physicochemical, rheological, colloidal, particle-size, and microbiological properties. The repository also includes MATLAB scripts developed for quadratic model fitting, response surface visualization, statistical prediction, and optimization within the experimental design space. These computational tools support reproducible analysis of the dataset and allow the identification of optimal formulation conditions based on individual and combined response criteria. Therefore, this Mendeley Data repository provides a structured dataset and MATLAB-based workflow for researchers interested in functional fruit matrices, probiotic food formulation, response surface methodology, and computational optimization in food process engineering.
