This study evaluated an enzymatic-bacteriocin strategy to destabilize the biofilm extracellular matrix and enhance Listeria monocytogenes inactivation. The efficacy of an enzymatic cleaner, the bacteriocin nisin, and their sequential or simultaneous combination was assessed using complementary biofilm models, including microplate assays and a food soil surface contamination model simulating salmon-processing conditions. Biofilm structure was further characterized by confocal laser scanning microscopy (CLSM)
