Description

The data showed in the documents were obtained in the evaluation of exopolysaccharide from water kefir and reflects the results for: FTIR; XRD; TG/DTG; Photostability assay; Mucoadhesion; Grain Growth. The results showed thermal and photostability, good adhesion in the porcine mucosa (TA.XT texturometer), the growth rate of the grain and also the cryopreservation of kefir grains.
