A PVA/ g-C3N4 nano antibacterial paper for antibacterial preservation of fresh pork

This is the data related to the preparation of pva/g-c3n4 nano antibacterial paper and its application in fresh pork preservation.In this study, we initially transformed the lamellar porous bulk g-C3N4 into g-C3N4 nanosheets (CNNs) using the thermal oxidation stripping method. This process aimed to increase reactive sites and facilitate the rapid transfer of photogenerated electrons, thereby augmenting its photocatalytic antibacterial activity. Subsequently, we fabricated PVA/CNNs nano antibacterial paper via a coating method that involved the utilization of the biodegradable material polyvinyl alcohol (PVA). We assessed the antibacterial properties of the PVA/CNNs nano antibacterial paper against Escherichia coli and Staphylococcus aureus. Furthermore, we conducted a preliminary evaluation of the application of g-C3N4 in antibacterial preservation of fresh pork through preservation experiments. This evaluation serves as a reference for the potential utilization of g-C3N4 in the realm of antibacterial food preservation.The inclusion of 0.7 wt% g-C3N4 in PVA/ g-C3N4 nano antibacterial paper exhibited remarkable antibacterial effects (99.6% against Escherichia coli and 99.7% against Staphylococcus aureus), concurrently improving the paper's physical properties. Employing this functional antibacterial paper for fresh pork preservation effectively retards the growth of total bacterial count, pH value, TVB-N value, and water loss rate. It also aids in sustaining the hardness and color of fresh meat, consequently extending its shelf life.
