Dataset of Volatile Profiles and Sensory Evaluation of Commercial Maize Snacks

Description

The generated dataset is organized into two main directories: CDF_Files and Sensorial (Fig. 1). The CDF_Files directory contains nine .cdf files corresponding to the triplicate HS-GC-MS analyses performed for the three evaluated samples. These files store the chromatograms and mass spectra used for the tentative identification of volatile compounds present in the samples. In addition, this directory includes the file HS_GC_MS_Results.csv, which compiles the processed chromatographic data, including peak areas, retention times, retention indices, and tentative volatile compound identifications. The Sensorial directory contains three .csv files, each corresponding to a specific sample and containing the raw results obtained from the descriptive sensory evaluations performed by the semi-trained panel.
