This dataset contains (1) 2D2C velocity fields around spheres sinking in dispersions of xanthan gum (XG) in distilled water (2) shear and extensional rheological characteristics of these non-Newtonian dispersions. Experiments comprised two test solutions containing 0.75 and 1.25 g/L of XG. The settling of three types of spheres was examined in a settling column using Particle Image Velocimetry (PIV).
