Description

The nutritional and functional properties of goat and cow milk in digestive tract of infant is still unclear. Applying simulated infant gastrointestinal digestion method, this study aims to systematically compare the digestibility, peptide profiling, and immunomodulatory role of the goat and cow milk, and further characterize their role in regulating homeostasis of gut microbiota and metabolism. Table S1: peptides detected in digesta of goat milk; Table S2: peptides detected in digesta of cow milk; Table S3: predicted allergic peptides in goat and cow milk; Table S4: total metabolites detected in the in vitro hindgut fermentation contents of goat and cow milk; Table S5: differential metabolites among control, goat milk, and cow milk groups (VIP value > 1 and p < 0.05); Table S6: KEGG pathways enriched using differential metabolites.
